Protein powder KD-13 is a dried plasma protein composed of pig albumin and globulin proteins obtained by fractionaction and spraydrying, suitable for the meat industry.
It has an enormous water binding capacity. During heating at temperatures above 65 ℃, the viscosity increases due to denaturation of plasma proteins included in it. this gel forming property as well as high solubility in brines makes this easy digested protein enriching product well suitable for injection in hams and similar red/smoked products.
It can be used to cuttered sausages for improving the yield as well as organoleptic features. Composition: spray dried blood plasma, protein contents 70%. Dosage: 0,5-1,5kg/100kg
